Franciacorta and pairings
We are now eight: a true family. Eight wines, eight personalities, all deeply connected to our territory and born from knowledge that reaches far back in time.
Each of our Franciacorta wines has this unique quality: it carries echoes of artisanal expertise rooted in a long history, while being modern, as tastes continue to evolve.
Here they are, each paired with suggested accompaniment, from casual aperitif to gourmet dinners (though we’re not fond of rigid rules – exploring new pairings is always exciting).
Extra Brut is perfect with an aperitif of oysters, raw prawns, tempura, or Grana Padano. It’s also a wonderful match for red mullet fritters or mozzarella in carrozza.
Brut is excellent as an aperitif and pairs beautifully with first course, fish, and white meats. Try it with a savory Parmigiano Reggiano flan.
Saten, with its delicate softness, enhances refined pasta dishes, fish, and white meats. Looking for a fun pairing? Try it with casoncelli Bresciani with butter and sage.
Rose Demi Sec is the ideal partner for cheeses, sweet dishes, and even fresh fruit at the end of a meal. Pair it with almond-studded sbrisolona cake for a delightful experience.
Rose Extra Brut shines with cured meats, grilled meats, blue cheeses and Grana Padano. For a flavorful idea, try it with roast beef and tuna sauce.
Millesimato Brut pair perfectly with rich and flavorful dishes, even simple ones like a slice of rustic bread topped with butter and sardines.
Quor Nature is the ideal companion for elaborate dishes, including meate-based ones like traditional Brescian spit-roasted meat. For a delicious alternative, pair it with Bagòss cheese risotto.
We conclude with elegance: Dosage Zero, or new Franciacorta, bold and vertical, with no added sugar. Perfect as an aperitif, is truly shines with all types of fish, particularly prawns, scampi, shellifish, or lake fish like pike and perch. It also pairs wonderfully with meats and fresh cheeses. Try it with scottona tartare, salmon sashimi, or a plate of fresh pecorino cheese with fava beans and extra virgin olive oil.
Join us on Saturday December 7 and Sunday December 8, at Tenute Montina to welcome Dosage Zero, with a tasting featuring gastronomic delights specially curated to showcase our newest addition.
