Satèn vs. Dosage Zero: Decanter’s Take on Two Faces of Franciacorta

Satèn vs. Dosage Zero: Decanter’s Take on Two Faces of Franciacorta

Engaging with international critics is always an exciting milestone for any winemaker.
Recently, judges from the prestigious Decanter magazine tasted and reviewed a selection of our labels. Their tasting notes gave us the perfect opportunity to reflect on how two fundamentally different styles can express the exact same terroir.

When exploring Lombardy’s premier sparkling wine region, wine lovers often wonder: what truly sets the different styles of this appellation apart? How do you choose the perfect bottle for a gift, and how do you pair them at the dinner table?
Using Decanter’s recent reviews as our guide, we’ve put together a practical handbook on technical notes and gourmet food pairings.

The Whispered Elegance of Franciacorta Satèn (89 Points)

Satèn is far more than just a creative name; it is a unique technical designation exclusive to our region, governed by strict production regulations. Unlike traditional Franciacorta, Satèn is crafted exclusively from white grapes—100% Chardonnay in our case—and is defined by a key structural difference: the bottle pressure never exceeds 5 atmospheres, compared to the standard 6.

This lower pressure results in an exceptionally creamy mousse and a delicate, almost velvety perlage that you can truly feel on the palate.

In their tasting notes, Decanter’s judges highlighted delicate aromas of mandarin, pear skin, and honeydew melon, backed by a subtle mineral undertone. Awarding it 89 points, the panel praised its incredibly “silky” mousse—a characteristic that perfectly embodies the philosophy behind this style.

  • Food Pairings: Thanks to its innate smoothness and enveloping texture, Satèn works brilliantly when contrasted with dishes that feature high acidity or salinity. It is the perfect choice for a dinner party, pairing beautifully with seafood crudo, salmon tartare, and seared scallops, as well as rich risottos and delicate vegetable-based pasta dishes.

The Rigor and Pure Expression of Dosage Zero (92 Points)

While Satèn is defined by its softness, Dosage Zero (also known as Pas Dosé or Brut Nature) sits at the exact opposite end of the spectrum. Here, following disgorgement, the bottles are topped up without adding any sugar to the liqueur d’expédition. The wine is presented in its purest, most “naked” form—a transparent reflection of the vintage, the vineyard, and the soil.

The Decanter panel highly appreciated this verticality, awarding our Dosage Zero an impressive 92 points. The review describes a structured, citrus-forward wine with a mineral nose reminiscent of flint, preserved lemons, and dried fruit. On the palate, the wine is bone-dry, crisp, and vibrant, showing clean notes of grapefruit and red apple.

  • Food Pairings: Dosage Zero is a wine of great character, ideal for pairings that require a palate-cleansing effect. Its total absence of residual sugar and striking acidity make it the ultimate companion for fried seafood, oysters, and premium shellfish. For a full-course dining experience, it pairs surprisingly well with baked whole fish or Italy’s finest cured meats, such as aged Culatello.

A Matter of Style

Silky softness or crisp verticality? There is no single answer when looking for the “best” Franciacorta. Instead, there is simply the right bottle for the right occasion and personal preference. Whether you are looking for a special gift for a wine enthusiast or selecting the lineup for a gourmet dinner, the key is to let the story in every glass guide you.
